The essence of Palazzo di Varignana is expressed in all its peculiarities with the Villa Amagioia Metodo Classico Blanc de Noirs. Pinot Noir through modern winemaking and sparkling techniques perfectly expresses the full potential of this territory.
GRAPE VARIETY: Pinot Noir from the eastern slopes.
SOIL: Blue clay loams.
VINIFICATION: Harvesting of the grapes at the perfect degree of ripeness in the coolest hours of the day, direct pressing of the grapes and splitting of the must, followed by fermentation at a controlled temperature in stainless steel tanks. Foaming in the spring of the year following the harvest, it is bottled in a temperature-controlled environment. Disgorgement takes place after at least 24 months of ageing on its lees.
CHARACTERISTICS: Golden yellow colour with pink gold reflections, fine and dense perlage. The nose offers citrus notes on a broad meadow of white flowers. Small candied sensations prepare for drinking. Creamy, ample attack with pleasant fruity notes sustained by a salty tension that runs through the entire sip. Savoury and fresh hints, the citrus and density of the blue clays return. Serving temperature: 8°-10°C.

Pinot Noir is a monovarietal wine, i.e. made from a single grape variety. Vineyards with a black grape variety produce a light ruby red wine that represents the silkiness of Palazzo di Varignana, the noblest interpreter of a bold territorial challenge. A wine that is processed using specific vinification techniques and then continues in French oak barrels.
The mosaic of soils typical of the calanchi landscape surrounding the hills of Palazzo di Varignana gives the Pinot Nero wine unique characteristics. VINIFICATION: Harvest of the grapes when fully ripe, gentle destemming and cold maceration before fermentation in cement. Maturation in cement and wood for the year following the harvest.
CHARACTERISTICS: Shows an elegant ruby red colour. The nose opens with hints of violets and small, dark, ripe red fruits. A rose petal accompanies the spice and tobacco on the finish. On the palate the wine is broad and velvety, succulent in its clean, well-defined fruit; a perfect balance of its components enhances its pleasantness and delicate persistence. Serving temperature 16°-18°C.

Chardonnay wine is a grape variety from which the finest and most famous wines come, one of the most cultivated white grape varieties in the world.
The density of the soils and the strong temperature fluctuations between day and night in the Varignana lands enhance the aromatic potential of this grape variety, making it rich and persuasive.
The colour of Chardonnay is bright yellow, its aroma is delicate and recalls hints of fruit such as pear, white flower and vanilla, the unique characteristics of this wine.

SOIL: Mixtures of yellow sands with the presence of skeleton.
VINIFICATION: Harvest of the fully ripe grapes in the cooler hours of the day, extraction of the must, cold static decantation, fermentation in temperature-controlled cement vats and a fraction consecutively in wood. Maturation during the winter on the lees and bottling during the spring following the harvest.
CHARACTERISTICS: Characterised by a brilliant yellow colour. The nose is captivating and opens with intense aromas of white flowers, pear and vanilla. Subtle mineral hints, creamy on the palate, it is refined with a good balance between acidity, body and fresh fruit notes. Serving temperature 12°-14°C.
