Ingredients and expertise by Master Pastry Chef Biasetto, 100% made in Italy
At the heart of our Christmas Cake is a 100% Italian organic flour from Piacenza: lower in gluten than Nordic flours, but more elegant and aromatic. The recipe uses live sourdough starter and ingredients selected one by one, fully respecting a completely artisanal process. For Biasetto, every element plays a precise role: the clear, plump Australian raisins are coated in beeswax to maintain their softness and prevent sugar crystallization; the Calabrian orange peels, candied "French-style" at a low temperature for over a week, turn into small cubes that melt on the palate; the Madagascar vanilla is carefully measured so as not to overwhelm the aromatic balance of the dough. The creation is completed by a macaron-style glaze—a baked meringue with almond flour and sugar crystals—which makes up about 15% of the cake's weight, lending a refined almond fragrance and an elegant visual uniformity.
Biasetto also emphasizes the total Italian identity of the project: "Apart from the raisins and the vanilla, this is a 100% Italian cake, from the raw materials to the hands that make it. It was born and crafted entirely in Italy, with Italian ingredients and Italian artisans: a true expression of our know-how."
INGREDIENTS: WHEAT flour, extra virgin olive oil (13%), raisins, candied orange peels (orange peels, glucose syrup, sugar), sugar, fresh EGG yolk, natural sourdough starter, organic honey, orange extract, lemon extract, natural vanilla, salt, BARLEY malt. Glaze: ALMONDS, sugar, fresh EGG white, type "00" wheat flour, corn flour. May contain traces of: MILK AND MILK PRODUCTS, SOY, PEANUTS, OTHER NUTS, SESAME SEEDS, MUSTARD. The light of Palazzo di Varignana is captured in the Villa Amagioia Metodo Classico Blanc de Blancs. An ode to refinement. Chardonnay and Pinot Blanc fully express the radiance and beauty of Palazzo di Varignana. BLEND: Chardonnay and Pinot Blanc. SOIL: Blue clay mixtures. WINEMAKING: Grapes are harvested at the perfect stage of ripeness during the coolest hours of the day, followed by direct pressing of the grapes and fractioning of the musts. Fermentation then takes place at a controlled temperature in stainless steel tanks. The second fermentation occurs in the bottle in a temperature-controlled environment during the spring of the year following the harvest. Disgorgement takes place after at least 24 months of aging on its own lees. CHARACTERISTICS: Golden yellow color with a fine and dense perlage. The nose offers persuasive notes of white flowers and pear. Balsamic and cedar fragrances prepare the palate for tasting. Wide, creamy entry with pleasant floral and fruity sensations supported by a beautiful fresh and savory tension that carries through the entire sip. Serving temperature is 6°-8°C. ALCOHOL CONTENT: 12.5%
