Cabianca is an organic extra virgin olive oil obtained from olives grown with full respect for the environment. Its profile reflects a careful production process, enhancing the richness of the young, intense fruit and the purity of the territory.
On the nose, the oil is broad with aromatic notes reminiscent of olives at the right degree of ripeness, characterized by notes of freshly cut grass and tomato. A remarkably balsamic and aromatic extra virgin olive oil.
On the palate, it is fruity with herbaceous notes, where distinct hints of green leaves such as wild fennel, lettuce, and arugula emerge. The finish is harmoniously balanced with bitterness and spicines
GRAPE: Sangiovese from the rows exposed to west.
SOIL: Calcareous sand mixtures.
VINIFICATION: Manual harvesting in cassettes, cooling of the grapes, delicate destemming and maceration in cement with red wine making. Matured in wood and concrete for one year.
CHARACTERISTICS: It has an intense ruby red color with violet reflections. The nose expresses hints of cherry and small red and black fruits sublimated by ethereal notes of licorice. On the palate, the wine is slender, fresh and balanced with a vibrant tannic part, which tells the true soul of the land of Varignana. The savory and persistent finish recalls the aromas perceived to the nose. Serving temperature about 18°C.

At Palazzo di Varignana there are 400sqm of saffron in the Garden Garden Rio Rosso. The spice called saffron is obtained from the stigmas of the flower of Crocus sativus, belonging to the family of the Iridaceae. Each flower opens in the sun’s rays and closes when it is dark or rainy; inside its corolla it has three stigmas of bright red color, from which the spice is obtained. The stigmas of saffron contain more than 150 volatile aromatic substances, components of its carotenoid-rich essential oil that give the dishes their typical golden yellow colour.
