Saffron
Among the lands of the Palazzo di Varignana farm, which cover a vast area of the hillside south of the Via Emilia, in the hamlet of Varignana in Castel San Pietro Terme, a terraced vegetable garden is used to grow 42 different aromatic herbs and a very original and rare production of Italian saffron. The production of Palazzo di Varignana's saffron takes place in the Orto Giardino di Rio Rosso, an evocative garden of aromas that enjoys a magical sense of immersion in the green. This precious spice is extracted from the three stigmas contained in the corolla of the Crocus sativus flower, which belongs to the Iridaceae family. The stigmas of saffron contain more than 150 volatile aromatic substances, components of its essential oil rich in carotenoids that give it the typical golden-yellow colour to the finest dishes. Together with our food products, Italian saffron is a precious gift for experts and lovers of cooking recipes, in this case, featuring the most expensive spice with its confusing aroma and splendid colour.

Saffron has a particular affinity with earthy vegetables, with risotto, and is also perfect in desserts because its aroma is very reminiscent of vanilla.
