Correggiolo, an ancient cultivar of Tuscan origin, has long found a favourable environment for its cultivation in our land. It is a fruity monocultivar reminiscent of green olives, balanced on the palate with fresh vegetable notes, in which thistle, artichoke and fresh almond stand out in pleasant contrast to the well-dosed bitterness and spiciness in the finish.
Preferably raw, ideal on bruschetta, legume soups, pinzimonio and grilled meat.

Vargnano Monocultivar Nostrana
This very limited production is obtained exclusively from the cultivar Nostrana. The olives are still harvested green, which allows the cultivar to best express its characteristics. The oil is pale green in colour, the fruitiness is intense, with ample herbaceous fragrances of green apple, rhubarb leaf and tomato; the palate emphasizes the aromatic breadth, closes an elegant spicy green olive.
Strictly raw, to enhance fish carpaccio, salads, vegetables and soups.
